Why couldnt Jim have used a true story? Well because no one knows the intimate details of anyone's life aboard the ship, other than the experience of the sinking. In my opinion it would have been disrespectful and fraudulant even, to use two real victims and make up a story this big about them. There just isnt enough info. on any of them to do something like that. All they knew is that some wives were unwilling to leave their husbands, and they portraid that in the scene when the couple is on their bed as the room is filling with water, and another scene when a young wife is TORN away from her husband as she is yelling "no" and crying.

As far as the accuracy of Jack and Rose intermingling, well if I recall Jack did spend most all of his time in the area he "belonged" and only the one time in first class when it appears he was escorted by Rose, then dressed for the part so no one noticed. When he went back in his normal clothes, he was denied entry, then kicked out. He had to disguise him self to get into first class, then after that, Jack and Rose spent the rest of their time running from everyone if I'm not mistaken lol, so I dont the accuracy is too far off here.
